Ingredients:
6 egg yolks
1/2 cup granulated sugar (100g)
2 tablespoons water (30ml)
2 cups mascarpone cheese (500g)
3/4 cup heavy cream (200ml)
1 teaspoon gelatin sheets (3g)
1 tablespoon water (for gelatin) (15ml)
3.5 ounces dark chocolate (100g)
10.5 ounces ladyfingers (300g)
Unsweetened coffee, as needed
Bitter cocoa powder, as needed

Instructions:
In a double boiler, combine the egg yolks, water, and sugar. Heat until the mixture reaches 185°F (85°C), stirring constantly to pasteurize the eggs. After pasteurizing, use a whisk or mixer to beat the egg yolk mixture until it becomes light and fluffy.
Gently fold the mascarpone cheese into the egg mixture until fully combined.

Soak the gelatin sheets in 1 tablespoon (15ml) of water to soften. Then, melt the gelatin gently and stir it into the mascarpone mixture. In a separate bowl, whip the heavy cream until it forms soft peaks. Gently fold the whipped cream into the mascarpone mixture. Fold in the dark chocolate, either melted or finely chopped, depending on your preference.

Dip the ladyfingers briefly into the unsweetened coffee, making sure they are soaked but not overly soggy. In a serving dish, create alternating layers of soaked ladyfingers and the mascarpone mixture. Repeat this layering until all the ingredients are used, finishing with a layer of the mascarpone mixture. Dust the top layer generously with bitter cocoa powder.

Refrigerate the tiramisu for several hours or overnight to allow it to set properly. Enjoy your delicious tiramisu!
